Sweet Potato Souffle


3 cups mashed sweet potatoes
1 cup sugar
1/2 tsp. salt
2 eggs (or egg substitute)
1/3 stick margarine (softened)
1/3 cup milk
1 tsp. vanilla


Mix all ingredients and pour into greased baking dish.



1 cup light brown sugar
1/3 cup Glutino All Purpose Flour
1/4 tsp. salt
3/4 tsp. baking powder
1 cup quick cooking oats (or 1 cup of nuts)
1/3 cup melted butter


Mix together flour and sugar, then add oats (or nuts) and melted butter; mix well.  Spread over the sweet potatoes.  Bake 35 minutes at 350 degrees.
