White Chili

Ingredients

3-4 cans of beans (Navy, Cannellini, Great Northern, Black Eyed Peas, Chick Peas, etc.)
1-2 cans white corn or hominy
1 medium onion, chopped
1 can green chilis
1-1/2 cup of turkey or chicken (cooked and broken up)
1/2 tsp. garlic powder
3/4 tsp. oregano
1/8 tsp. cloves
1/2 tsp. ground cumin
1/2 tsp. cayenne pepper (optional)
1 cup of turkey broth or chicken broth

Directions

Saute onions in olive oil, add rest of ingredients.  Simmer for one hour.

Spicy Turkey Tortilla Soup

Ingredients

4 cups chopped turkey
2 cans diced tomatoes
1 can black beans
1 can pinto beans
1 can whole kernel corn (do NOT drain)
1 cup chopped onion
1 packet of taco seasoning
1 packet of Hidden Valley Ranch Dressing mix

Directions

In a large pot combine turkey, onion, tomatoes, beans, and corn.  Mix in both seasoning packets.  Allow to simmer for as long as you like – at least 30 minutes.

Brunswick Stew

Ingredients

1 lb. ground turkey
1 lb. ground beef
1 can cream style corn
1 can whole kernel corn
1 cup ketchup
1 cup hickory smoked barbecue sauce
1 can beef broth
1 onion, chopped
1 tsp. Liquid Smoke
Hot sauce (to taste)
2 (12 oz.) packs of frozen lima beans

Directions

Brown and drain meat.  Add remaining ingredients.  Mix well.  Simmer 30 minutes to 2 hours.

Hurst’s Original 15 Bean Soup

Ingredients

1 Package of Hurst’s 15 Bean Soup
1 lb. ham or smoked sausage
1 cup chopped onion
15 oz. can diced tomatoes
1 tsp. chili powder
Juice from 1 lemon
Minced garlic (to taste)

Directions

Place beans in a large pot, cover with 2 quarts of water.  Allow beans to soak overnight, or at least 8 hours.  After soaking, drain excess water, and add 2 quarts of fresh water and meat.  Bring to a rolling boil, reduce the heat and simmer uncovered for 2-1/2 hours.  After simmering, add onion, tomatoes, chili powder, lemon, and garlic.  Simmer 3o minutes.  Add ham packet 1-2 minutes before cooking is completed.

Taco Soup

Ingredients

1 lb. ground beef (or ground turkey)
1 large onion
1 can diced tomatoes
1 can mild rotel
1 can hominy
1 can whole kernel corn
3 cans kidney beans
2 packs taco seasoning mix
1/2 cup of water

Directions

Brown meat and onion, drain.  Add other ingredients.  Bring to near boil, simmer about 30 minutes.

Italian Chili

Ingredients

1 lb. bulk Italian Sausage
2 cups diced onion
2 tbsp. olive oil
1 tbsp. diced garlic (or 2 tbsp. powdered garlic)
2 large cans (28 oz) crushed tomatoes
2 cups beef broth
2 cans cannellini beans (white kidney beans)
2 cans red kidney beans
1/2 cup basil
Salt and Pepper to taste

Directions

Brown sausage in olive oil. Saute onion and garlic in separate pan with olive oil.  Add onion and garlic to sausage after it is done.  Stir in tomatoes and broth.  Reduce heat to medium and simmer for 30 minutes.  Add beans (drained and rinsed), basil, salt and pepper to chili until beans are heated.
